Ein new Kochbuch, compiled by Marx Rumpolt and first issued at Mainz in 1581, ranks among the most ambitious cookery treatises of the German Renaissance. Drawing on the author's experience as master cook to the Electors of Mainz, the work organizes thousands of recipes by ingredient and occasion, and is distinguished by its fine woodcut illustrations depicting kitchens, banquets, and the carving and presentation of game.

Roast Peacock Served in Its Plumage
Signature dishMarx Rumpolt's vast court cookbook is famous for its spectacular presentations of game and fowl, and the peacock dressed and returned to the table in its own iridescent feathers stands as its emblem. Written by the master cook to the Elector of Mainz, the book catalogues an astonishing range of birds and beasts for princely banquets, and its finely engraved illustrations of such showpieces capture the theatrical splendour of late sixteenth century German court dining.
